Happy Birthday Mom! 🙂
I was getting pretty bored with just plain old baked chicken seasoned the same way every time so decided to switch things up! I saw this video on Facebook for mozzarella stuffed buffalo chicken breasts and immediately knew I had to make them! I knew I could make them healthy and easy to track.
The reason I stick to more “boring” meals with very few ingredients is simply because they are east to track and lower in macros. However, I want to get back to making at least one FUN recipe a week with more ingredients to share with anyone who may be interested!

Not sure how that link will work but it was by someone called Tip Hero? I have also checked out “Tasty’s” Facebook page and can’t wait to try a ton of their recipes! I love how most of their recipes are done in a video format, usually in under a minute or less! So easy to follow and fun to watch. Here’s a link to their page as well: Tasty
Anyway, this recipe calls for melted butter and mozzarella cheese but to make it healthier I just omitted the butter and used fat free cheese. Let me tell you, this was such a nice change to just baked chicken and was SO delicious. I can’t wait to make this again, so easy too!
My entire meal:
Very filling! I had a busy day and did NOT eat enough through out the day so after this meal I still had a ton of food to eat (not that I’m really complaining 😛 )
After dinner I also had a protein brownie with fat free whipped cream, a chocolate rice cake, and a frozen yogurt cookies and cream bar. Since these are all healthier desserts it was okay and I didn’t feel guilty after! Rather enjoyed it actually 🙂 And it made me hit my goals for the day!
