As I mentioned in my last post, today was meal prep day! We picked up a ton of food the day before in Costco:
- Top Round
- Green Beans
- Sweet Potatoes
To feed 2 people who love to eat and lift takes a ton of food.
We started off by cleaning, piercing, and wrapping the sweet potatoes in tin foil and put them in the oven (1.5 hrs @ 350 since other things were going in as well). Then I seasoned the chicken and cod with pink Himalayan salt, pepper, onion powder, garlic powder, and kickin’ chicken seasoning for the chicken and garlic sriracha for the cod and put those in with the sweet potatoes (30 min).
Next we seasoned the asparagus with salt, pepper, and garlic powder and stuck them in the oven as well (15 min). While those were cooking I steamed the green beans on the stove top and prepared the salmon.
The boyfriend made the salmon since he’s way better at it than me. He cooked it in a pan on the stove top with some EVOO to get that nice crust.
The sweet potatoes weren’t done yet so I decided to make some banana cookies. These are 2 ingredient cookies I’ve been making for years: I just used 2 bananas and 1 & 2/3 cups oats- use more or less oats depending on the texture you want. That’s all you need and they come out delicious. Just mash up the bananas with a fork and mix in oats. I made them that way for years and love them but recently I started adding WF Zero Calorie Maple Syrup, cinnamon, and vanilla extract to the mix for more flavor :). I also like to add just a few chocolate chips to each (you really only need a few). I’ve also made them with walnuts, sliced almonds, craisons, shredded coconut, and peanut butter- each way delicious! These are so easy and healthy and have so many combinations you can try. I weigh all the ingredients out and plug them into the recipe section in MyFitness Pal to track them.

Once everything was cooked and packed up into Tupperware we headed to the gym for a quick shoulder workout then came back for dinner. We cooked one of the top round steaks, heated up a sweet potato and green beans, made a side salad, and poured some red wine.
Then we had a banana cookie for dessert! Hope everyone had a great weekend- it’s Monday & time to kick some butt.
